What’s involved in the extraction process?
Her team begins by carefully harvesting the honeycombs from her beehives by hand, ensuring minimal disruption of her hardworking bees. With her own state-of-the-art honey extraction plant the team extract the honey from the combs using centrifugal force.


A labour of love
After spinning, they meticulously skim the honey to remove any wax or impurities, while preserving its valuable nutrients and flavors. By avoiding heat treatment and microfiltration, she preserve the honey’s natural enzymes, pollen, and beneficial compounds, enhancing its taste and delivering the full nutritional benefits that honey has to offer. Characteristics of raw unfiltered honey
Raw honey crystallizes over time due to its natural composition.
The process of crystallization occurs when the glucose in the honey separates from the water and forms solid crystals. These crystals then start to spread throughout the honey, creating the familiar grainy texture. The rate at which honey crystallizes can vary depending on factors like temperature, floral source, and the presence of pollen and other particles.


A natural process
While some people may see crystallized honey as undesirable, it’s a natural and normal process that actually indicates the purity of the honey. Raw, unprocessed honey is more likely to crystallize compared to processed honey, which has been heated and filtered to prevent crystallization. The crystallization does not affect the taste or nutritional properties of the honey, but if you prefer liquid honey, don’t worry! Reversing the crystallization is easy. Simply place the pot in warm water (around 40 degrees celcius) and let the crystals dissolve gently. You’ll be left with smooth, liquid honey ready to be savored. Or purchase our creamed honey which stays smooth and spreadable.
Genuinely unprocessed
Because of our approach, you may occasionally notice traces of hive matter in our honey. This includes tiny particles of beeswax, pollen, propolis, and other natural components. These minuscule remnants are completely normal and a testament to the genuine, unprocessed nature of our honey.
Our choice to skim the honey instead of microfiltration ensures that you receive honey that is closer to the way it is found in the hive. While we take great care to minimize the presence of hive matter, we believe that these small particles are a testament to the authentic origin and unique character of raw honey.
